I assume they were traumatized as children and forced to eat a flavorless mush that had a baby food consistency and have been scarred forever. But… this is nothing like what people describe to me as their memories of dreaded split pea soup. It is hearty, full of flavor and leaves you feeling warm inside. This is the perfect meal to share with friends and neighbors, served with a french baguette. If you are one of the people who feel hatred towards split pea soup, please give it one more chance! Vegan Split Pea Soup
Delicious split pea soup loaded with veggies and spices!
Ingredients
- 8 c. veggie broth
- 1 Onion
- 1 T. garlic salt
- 1 T. garlic and herb no salt seasoning
- 1 T garlic powder
- 1 T onion powder
- 2 T. natural ketchup (no high fructose corn syrup )
- ½ t. smoked paprika (optional for a more “meaty” flavor)
- 1 t. dill
- ¼ t. Thyme
- 1/8 t. pepper
- 3 bay leaves
- 1 t. parsley
- 3 carrots
- 3 c. cauliflower florets
- 3 celery stalks
- 2 potatoes
- 1 can fire roasted tomatoes
- 1 lb. green split peas
- 1 c. water
- 2 T. braggs amino acids (optional)
- cashew cream (optional topping)
- sliced green onion, for garnish
Directions
- Step 1 1. Heat ¼ c. of the vegetable broth in a large pot over medium heat. Cook onion, garlic, carrots and celery until onion is soft.
- Step 2 2. Stir in potato, split peas, can of tomatoes, broth and seasonings. Cover pot, and bring to boil.
- Step 3 3. Reduce to a simmer for one hour. Discard bay leaf and add salt to taste. Serve in a bowl with green onions and cashew cream, if you desire.

- Step 5 *This is an awesome meal to make in a slow cooker, just set it on low for 6-8 hours. Remove bay leaves before you serve. Enjoy!
- Step 6 *To make this ahead as a freezer meal, just add all the raw ingredients (except vegetable broth and water) to a gallon size freezer Ziploc bag. The night before you want to eat this Split Pea Soup pull it out of the freezer to defrost and toss in a crockpot the next morning. Add the vegetable broth and water. Set it on low for 6-8 hours. Remove bay leaves and enjoy!
